Irish Leek and Potato Soup + St. Patrick’s Day 🍀playlist 🎧 [VEGAN·GLUTEN-FREE]
Hey! It’s almost St. Patrick’s day! Being as fond as I am of Irish music, I couldn’t let the day go without some Irish tunes for your ears.
If you celebrate St. Patrick’s day, I’d love to know what you do. For me, this day means celebrate everything Ireland haha.
Its music, its food, its films and TV series…so if you have any recommendation, don’t hesitate to leave a comment.
Of course, it’s the perfect day to dress in green and eat anything green too.
I often eat a very greenish diet, I love my veggies.
This time, I thought I’d make the classic Leek and Potato Soup, but with a hint of green. The secret…adding some peas.
If I’m honest, I’m not quite sure if that’s something Irish people do too, I just went with my gut and it said: more protein in green form. The result: adding those peas.
It’s the season for fresh peas, so if you can grab some, please do the extra work of taking them from the pod.
The texture and flavour can’t compare. ‘Cause nothing compares 🎧 to fresh peas. I had to, you know I had to.

So, about the soup. I am a fanatic of leeks in any recipe.
I don’t believe I’ve had a dish that leeks didn’t make better.
It’s like eating a delicate onion with a smooth texture. I don’t know, maybe I am a hopeless romantic.

I’ve made several Irish recipes in this blog already and as a soup lover (I am soup people) I had to make this soup.
The result was perfect. The creaminess of the potatoes and the richness of the leek, onion and garlic flavour… I want more!
It’s perfect to eat warm or cold, it doesn’t matter. What matters is that it’s not going to last too much. I made two servings because I was thinking poorly. Be wise and duplicate the recipe if you are more than one person eating, you won’t regret it.
About dipping the bread… Two things I’ve learnt from staying at Irish homes were:
First: Love your spuds as you love thyself.
Second: Never have a meal without bread and butter.
I occasionally eat ghee and I am not gluten intolerant, so I made it with rye bread and ghee.
But this can be done with any kind of gluten-free bread, rice crackers, oat cakes…whatever you have on hand that supports the weight of a dollop of butter/ghee/margarine or any spread you have like nut butters or cashew cheese. The possibilities are endless. You choose your own version of bread and butter.

Irish Leek and Potato Soup for St. Patrick's day
Prep Time 10 minutes
Cook Time 20 minutes
Servings 2 people
Ingredients
- 2 tbsp olive oil
- 2 leeks
- 2 medium potatoes
- 1 onion
- 1 vegetable stock cube
- 2 garlic cloves
- 1 cup water
- 2 cups oatmilk
- 1 cup peas (use frozen if you can't find them fresh)
Garnish
- chopped scallions
- parsley
- 1 drizzle olive oil
- 1 dash sumac
Serve with
- 1 rye bread toast (or any other gluten-free option)
- 1 tsp ghee (or vegan butter/nut spread/cashew cheese)
Instructions

Stir fry the leek and onion with the olive oil. Add some salt when it starts to become transluscent to help them release their own juices so you need less oil.

Add the garlic after they are almost done.

Stir for one minute and add the potatoes cut in small chunks together with the peas.

Add the veggie stock, stir and add the liquids together with your desired amounto of salt and black pepper.

Let it simmer for 20 minutes or until the potatoes are done.

Blend with a hand blender.
Recipe Notes
- You can serve it cool too and it tastes delicious.
- If you don't eat ghee, you can serve with vegan butter but I don't usually buy it. The same about margarine, that would work too if it's something you like.
- If you want something with a bit of a twist, rub a garlic clove on your bread and drizzle olive oil. Nit a twist for me, though 😅
- Pack it with protein by choosing a nut butter instead of ghee.
- If you want to make a whole meal out of this, choose hummus as a spread. Use a couple of tablespoons on top of your toast. Easy!
- If you don't have sumac, add a drizzle of lime juice. It helps balancing the sweetness of the soup.
- If you are using frozen peas, there's no need to thaw them.
