Halloween 2020 series: Calacús – Pumpkin Pancakes 🎃🥞
In Galicia we celebrate Samaín because we are Celts.
That’s why I wanted to post a traditional Galician recipe we make for Halloween: Calacús (also known in Spanish as Chulas de calabaza) basically a pumpkin pancake 😁
The original recipe has a lot more sugar and is usually deep fried. But if I’m known for anything…that is reducing sugar and deep frying in my recipes.
I’m not against eating anything, it’s just I don’t really like desserts that are too sugary, despite the efforts of my father (my grandpa was a baker 😅)
Deep frying, that’s another story. I love churros, and tempura, and deepfried anything. In that case, it just makes me feel sick all day, so when I do it…it has to be for a good cause.
The thing is, the day I was making this recipe, I thought pumpkin is sweet enough to leave some sugar behind.
In my opinion, it tastes amazing and serving it with the maple syrup as an extra, everyone can choose the amount of sweetness.
Of course, you can use honey if you want, or any other kind of syrup like date syrup or carob syrup. You can leave it out completely too, but it looked too good on the photos.
So, today is finally Halloween, what are your plans? It’s a very difficult time, due to the restrictions in meetings and hours.
I usually invite friends over to celebrate and make a party. I really wanted to this year, but the cities and other surrounding areas are closed due to coronavirus. I wonder how many people will be dressed as covid 19 for halloween 🤦🏼♀️.
Anyways, I’m celebrating with two neighbours so we can make a bonfire and a lot of witchy rituals. I’m very lucky they are into this kind of things too.
But also, who’s not into rituals of any kind, right? Specially if they come with food and fun. Which reminds me…whatever you do tonight, have fun and keep fooding!
Also, if you want to make other recipes tonight. This year I made everything traditional and Celtic, honouring my ancestors and Halloween’s real origin. Samhain is my favourite sabbat.
Even despite this strong Blue Moon that is shaking things up with her friend Uranus like a true expert.
Oh, and don’t forget the closing of cities, the pandemic and all that’s going on, not having all the people I want over… I’m having fun tonight! 🎃🧡 #positivity 🤣

Calacús - Low-sugar Pumpkin Pancakes
Prep Time 10 minutes
Cook Time 20 minutes
Servings 2
Ingredients
- 350 g pumpkin (cooked)
- 2 eggs (medium)
- 100 g flour
- 25 g panela (or any other sugar) (2-3 tbsp)
- 1 tbsp baking powder
- 1 pinch salt
- maple syrup, requeixo (cottage cheese) and goji berries (decoration)
Instructions

Cook the pumpkin.

Blend everything together.

Prepare in a pan with a little bit of olive oil on the base to help you toss them.

Serve stacked with a dollop of cottage cheese, some maple syrup and goji berries.
Recipe Notes
You can make this vegan by using vegan cheese and vegan eggs. The resukt would be almost the same.
You can use honey instead of maple syrup and any other fruit intead of gojis.
A squeeze of lime juice at the very end works well. Actually, the cheese is there because of it's richness and acidity, but any plant-based yogurt that is tart can be used as well.
