Artichoke Focaccia
Hey! I made this Artichoke Focaccia the other day. I used fresh veggies and homemade dough, but you can easily make it with cupboard ingredients.
Ingredients:
Pizza dough (approximately 3 cups of flour for 1 cup of water, 1 tsp salt and 1 tbsp olive oil)
3 big artichokes, boiled (or artichoke hearts from a can)
4 roasted piquillo peppers (I used homemade preserved piquillos, but you can use any other red pepper from a can, or even raw)
Salted anchovies
1 big onion
Sesame seeds
Oregano
Olive oil
Method:
If you make your own pizza dough, let it rise at room temperature for 2 hours. Then make the desired shape (a little bit on the thick side) and let it rest for another 20-30 minutes. Make little dots with your fingers. These holes will gather the juices of the veggies and the olive oil later.
Poach the sliced onion.
Add the onion, the artichokes (cut in four chunks) and the diced peppers.
Then finely chop the anchovies and be careful to distribute them evenly over the dough.
Add the sesame seeds and bake until the artichokes get a bit roasted.
Let it cool for a couple of minutes and add the olive oil and oregano before serving. You can add some other herbs to the oil if you want, like thyme or rosemary.
