Ham or gammon tacos: A perfect idea for Christmas dinner or Boxing day leftovers
Have you ever wanted to make a non-traditional Christmas dinner? Then, this post is dedicated to you. Unless you are Mexican, then…this is probably a little bit more traditional for you than for the rest of us 🙂
Ingredients:
For the tacos:
500gr piece of ham/gammon
1 can of chipotle chilies in sauce
4 tbsps Mic’s chilli sauce (choose your favourite level of heat)
2 shallots
Corn tortillas
Fresh cilantro
For the drink (each glass):
100 ml nopal juice
150 ml carbonated water (I used Perrier)
1 chilli and fresh cilantro to decorate
Big ice cubes
Method:
For the tacos:
Cook the ham/gammon in water for 4 hours. Or if you don’t have that much time, follow the package instructions (it’s usually less time)
Once cooked, discard the water (or save for another recipe), then shred the meat.
Add the chipotles and the sauce. Let it simmer for a couple of minutes so that the flavours penetrate into the meat.
Serve the hot tortillas with some of the meat, a little bit of chopped shallot and a bit of fresh cilantro.
For the drink:
Mix the juice and the water. Serve on top of two ice cubes. Decorate with a halved chilli (do not half completely, so it can rest on the rim of the glass) And add some cilantro leaves.
