Día de los Muertos: Tacos two ways

Today is the Day of the Dead (or Día de los Muertos as they say in Spanish). This Mexican tradition is known everywhere in the world.

I always enjoy celebrating anything, even when I learnt about it two days ago (not in this case, but happens to me all the time). Celebrations are excuses to investigate on other people’s traditions, learn and of course cook something different.

Today I made tacos for lunch and I’m cooking tacos for dinner right now. I am actually writing this post as I wait for the chicken to be cooked in the oven. This is new for me, a post on the go 🙂

Chile con carne tacos (makes 3 tacos)


Ingredients:

200 gr refried beans (you can buy them from a can, or simply fry some boiled pinto beans and mash them afterwards).

200 gr chile con carne (again, buy it from a can or cook some minced beef with onion, garlic, chipotle, tomato sauce and kidney beans. Add spices like cumin and black pepper and a tiny bit of sugar).

1 avocado, chopped.

3 corn tortillas.

Salsa (I used two left over Mild Sauce from Taco Bell).

Chopped cilantro.

Method:

Warm the tortillas.

Layer in this order: refried beans, chile con carne, avocado, coriander.

Top with some salsa. Add chopped chipotle if you love the extra spicy kick.

Serve and enjoy.

Chicken and walnut tacos (makes another 3 tacos)

Ingredients:

3 halved chicken wings.

3 slices of apple (Granny Smith is perfect).

1 slice of homemade quince jelly.

3 walnuts.

1 chipotle chilli from a can.

2 tbsp sour cream.

1 avocado.

3 corn tortillas.


Method:

Preheat the oven (250ºC) to cook the chicken wings.

Chop the chipotle and add to the chicken. Cook in the oven in a tray with tin foil for 15 minutes. Uncover and cook until golden.

Once the chicken is done, take off the bone, chop and add some salt.

Slice the avocado and add on top of the tortilla.

Sprinkle some chicken and walnuts.

Add the chopped apple slices and the quince jelly.
