Chicken Noodle Soup: Winter countdown
A Winter wouldn’t be complete without chicken noodle soup. This basic recipe has everything you need to get cosy and warm in the last days of winter. It is pretty simple if you use premade noodles, a little bit more complicated if you make them yourself (but much better and rewarding)
Ingredients:
1 chicken carcass (remove the meat and use for other recipes, except for some that you will need to add on top of the soup)
3 garlic cloves
1 onion
2 l of water
3 carrots
2 tbsp fresh sage
Black pepper
For the chilli sauce:
1 tbsp sriracha
1 tbsp olive oil
5 sage leaves
For the noodles:
1 egg
1 tbsp semolina
1 cup white flour
Method:
Boil the water and add the carrots, onion, garlic and the chicken carcass. Add some salt and black peppers.
Let it cook until everything is very smooth.
Use a sieve to get the clean broth.
Then sepparate the carrots, onion and garlic and blend with a little bit of the broth and combine with the rest of the broth.
Add chopped sage and cook for as long as you want.
Make the noodles by mixing all the ingredients together. Then roll into a thin sheet and cut As you wish. I always use a food processor and a pasta machine in order to make them quicker.
Add the noodles to the soup.
In a pan, add a little bit of olive oil and fry some chicken bits. Add salt and reserve.
Make the chilli sauce by mixing all the ingredients.
Serve the soup, add some chicken and then some chilli sauce on top.
