Galician Fergese: Superquick recipe

My neighbours are too kind. They planted Padrón peppers and they are constantly giving me bags full of these wonderful veggies. I’m so grateful! The thing is, on their own, they are perfect. Nonetheless, I started fooding around with them. The result is this superquick recipe you can enjoy hot or cold. The Fergese it’s a hot recipe, but I love to prepare it and then have a cold bruschetta of the mixture before I put it in the oven.

Fergese is an Albanian dish. It consists of tomatoes, feta cheese and peppers baked in a clay with other ingredients such as onion, flour, yogurt… Being a traditional dish it has many different versions. This one I made is a simpler, Galician one.

Ingredients:

250 gr Padrón Peppers

200 gr feta cheese

200 gr Soft Galician Cheese (Queixo do Cebreiro Castelo) In case you can’t find it, you can use mascarpone, cream cheese or a combination of both, but this cheese is firm and has a distinctive taste that makes the dish better.

6 big tomatoes

Salt and Black Pepper

Method:

Remove the stalk from the peppers.

Chop everything, except for the peppers.

Place in a clay dish. If you want it cold,it is a perfect salad, just add some olive oil to make it even better. But I love it when it’s baked. Put it in the oven until the tomatoes are cooked (about 40 minutes) and the cheeses are melted. Enjoy with bread.
